Every once in a while I get a bit “egged out” and want to eat something else for breakfast besides eggs. The other day I found a recipe for chocolate grain free muesli on Ditch The Carbs. I had all the ingredients at home so I though that I would give it a try. It’s really good with yogurt and berries or paw-paw.
INGREDIENTS
50g coconut oil
⅛ cup cocoa powder
2 tbs Xylotol
1 tsp cinnamon
400g desiccated/shredded coconut thread/chips
100g pumpkin seeds
100g sunflower seeds
100g chopped almonds
100g walnut pieces
75g flaxseeds/linseeds

*I buy a ready mixed bag of seeds (375g) and mix that in instead of buying all the seeds separately.
WHAT TO DO
- Melt the coconut oil in a glass jug then dissolve the stevia, cinnamon and cocoa powder in it.
- In a large baking dish, mix all the seeds, nuts and coconut together.
- Pour the chocolate coconut oil over the coconut, seed, nut mix and stir well so all the granola is coated with the chocolate coconut oil.
- Bake at 180C/ 350F for 20 minutes until golden brown and crisp. Keep an eye on it while it’s in the oven, the mixture burns easily.
