I attempted a green bean and mushroom stew recently. I was going to be only green bean stew but then I thought that I would add the mushrooms as well. I also harvested our broccoli that had been growing in the garden and added it to the stew – it was pretty small so it can’t be added to the title of the stew. Here’s a picture of the baby broccoli from our garden.
Besides the small baby broccoli this is what else I added to the stew.
- Beef stewing steak/chops. The packet said steak but there were bones in it.
- 1 onion
- 400g, (one packet) of green beans
- 1 punnet of chopped mushrooms
- 1 packet of beef soup (you could use beef bone broth if you’re banting)
- my baby broccoli
- salt, pepper and some fresh thyme
Here’s what to do.
Gently fry onions until translucent and add to slow cooker. Quickly fry chops/steak to seal it- apparently it has something to do with flavour. I fried it for literally half a minute on each side before adding to the slow cooker. Add beans, mushrooms, broccoli, salt, pepper, thyme and soup mix mixed up with water. Close the lid and cook on low for 4 – 6 hours.
OM NOM NOM – that looks soooooo good. We ate it with cauli rice, but you can serve it with normal rice or mashed potato.
