Yesterday I made some YUMMY tomato and sweet potato soup. I wasn’t 100% sure if the sweet potato would work with the tomato, but I threw caution to the wind and decided to add it to the mix. I also needed to use the left over sweet potato from supper in something and this was the perfect opportunity.
- 4 large plum tomatoes – cut into four. (I’m sure you can use any kind of tomatoes, this is what I had in the fridge.
- 3 cloves of garlic
- mixed dried or fresh herbs
- 1 cooked sweet potato, (this was left over roast sweet potatoes, you can add as much as you like)
- coconut oil
What I did
Add coconut oil to pan or pot, add garlic, tomatoes, herbs and stock. Simmer until tomatoes are soft enough to mash. Add cooked sweet potato and cream before blending with a blender.
This recipe made enough for David and myself for lunch today. I should have made a little more for seconds because it was SO yummy.
